Stir Fried Beef with Onion--Chinese Recipe

How to make that 
Chinese Food
Ingredients:
  • 1 lb flank steak
  • 1 tbsp dry sherry
  • ½ tsp slat
  • Freshly ground black pepper
  • 2 tbsps soy sauce
  • 1 tsp sugar
  • ¼ cup oil
  • 2-3 slices ginger root, shredded
  • 1 large onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 ½ tsps cornstarch, dissolved in 3 tbsps stock 



Directions:

1. Cut the steak, against the grain, into thin shred. Mix together the sherry, salt, pepper, soy sauce, sugar and 1 ½ tsps of the oil in a shallow dish. Add the steak shreds and leave to marinate for 15 minutes.
2. Heat the 2 ½ tbsps of the remaining oil in a wok or pan over high heat. Add the ginger and onion and stir fry for 1 ½ minutes. Push them to one side and add the remaining oil to the other side of the pan. When it is very hot, add the steak and garlic.
3. Stir fry the steak shred and garlic in the oil for a few seconds until brown. Mix in the onion and ginger and stir fry for a further 1 minute. Stir in the cornstarch mixture and cook, stirring for about 30 seconds or until thickened.

Chinese Steamed Beef

Chinese Recipe
How to make that:
Serves 2-4.
Ingredients
  • 1 lb. beef steak
  • 1 tsp. cornstarch
  • 1/2 tsp. Salt and black pepper
  • 2 tsp. soy sauce
  • 1 tbsp. oil
  • 2 tbsp. sherry
  • 1 tsp. wine vinegar
  • 2 spring onions
Ingredients:
  1. Slice beef steak across the grain into thin strips.
  2. Place them in a bowl. Blend cornstarch, salt, black pepper, soy sauce, oil, sherry and vinegar; pour over beef.
  3. Chop the onions very finely and sprinkle over the top. Cover tightly and let stand at least 1 hour.
  4. Place bowl of beef on a stand in a saucepan or wok of boiling water; cover saucepan/wok and steam until beef is tender.

Ginger Beef (Microwave)--chinese Food

How to make Chinese Recipes:


Serves 4-6
Ingredients:
  • 300 g beef (thinly sliced)
  • 2 ½ tbsp oyster sauce
  • 100 g spring onions (cut into 4 cm lengths)
A:
  • 2 tbsp oil
  • 1 tsp wine
  • ½ tbsp cornstarch
B:
  • 150 g young ginger (sliced thinly)
  • ½ tbsp chopped garlic
  • 2 tbsp oil
Directions:
  1. Season beef slices with ingredients A.
  2. Fry ingredients B in a casserole on power High, uncovered for 3 minutes.
  3. Add in oyster sauce and cook on power High for 1 minute.
  4. Stir in seasoned beef and spring onions.
  5. Cover and cook on power High for 3 ½ minutes.
  6. Serve hot with rice.

Chinese Food Beef Kebabs

Chinese Recipe
How to make that
Yield: 6

Ingredients:
  • 750 gm steak (rump or sirloin)
  • 1/4 cup oyster sauce
  • 2 tsp oil
  • 2 tsp soy sauce
  • 1 clove of garlic, crushed
  • 2 x spring onions, chopped
  • 1/4 tsp sugar
  • 50 gm button mushrooms
  • 220 gm can water chestnuts
  • 3 x spring onions, cut into 2 cm pieces 

Directions:

1. Trim excess fat from meat and cut into cubes.
2. Combine the oyster sauce, oil, soy sauce, garlic, chopped spring onions, and sugar into a large bowl.
3. Add the beef and mushrooms (which have been wiped and left whole). Cover and marinate for at least 2 hours.
4. Thread the meat, mushrooms, water chestnuts and pieces of spring onions alternately onto skewers. Cook over hot coals brushing with the marinade until cooked.


NOTE: Use thin skewers for these kebabs as thick skewers tend to split the water chestnuts.

Minced Beef with Tomatoes and Potato Chips--Chinese Recipe

How to make that:

Ingredients:
  • 5 oz minced beef
  • 5 oz potatoes
  • 3 cups boiling salted water
  • 3 cups hot oil for deep frying
  • 8 oz tomatoes
  • 1 slice ginger
  • 1 shallot
  • 1 garlic clove
  • 1 spring onion
  • An extra 4 ½ tbsp oil for cooking
  • 1 egg
Beef marinade:
  • 2 tsp soy sauce
  • 1 tsp sugar
  • ½ tsp wine
  • 1 tsp cornflour
  • ¼ cup water
  • A pinch of pepper
  • 1 tbsp oil, to be added last
Seasoning:
  • ¼ cup stock
  • ¼ tsp salt
  • 1 tsp soy sauce
  • 1 tbsp sugar
  • 2 tbsp tomato ketchup
Gravy Mix:
  • 1 tsp cornflour
  • 1 tbsp water
  • ½ tsp dark soy
  • 1 tsp sesame oil
Directions:
  1. Place the minced beef in a mixing bowl then pour in the marinade to stir until evenly mixed. Leave to stand for 30 minutes. Blend in the oil. Stir thoroughly with a pair of chopsticks and continue to marinate for another 30 minutes.
  2. Wash, scrub and remove the eyes and blemishes of the potatoes. Cut into chips of about 1 ½ inch long. Soak in half the boiling water for 30 seconds and drain. Deep fry in hot oil til golden brown. Drain.
  3. Scald the tomatoes with the remaining boiling water and remove the skin. Leave the whole tomatoes aside for later use. Shred the ginger. Slice the shallot and garlic. Section the spring onion.
  4. Heat the wok with 2 tbsp oil and sauté the ginger, shallot and garlic. Pour in the tomatoes to fry for 1 minute. Stir in half of the stock and seasoning to simmer for 5 minutes and dish, using a deep container.
  5. Heat a pan to bring the other 2 tbsp oil to boil. Add the minced beef to stir fry until cooked. Pour in the remaining stock and season to taste. Thicken the sauce with the gravy mix and scoop over the tomatoes.
  6. Return the potato chips into the boiling oil to deep fry until crisp and golden. Arrange in batches beside the tomatoes.
  7. Break and shallow fry the egg with the last ½ tbsp oil. Place on top of the beef and scatter with the spring onion.

Steamed Minced Beef--Chinese Food

Chinese Recipe


Ingredients:
  • 8 oz beef fillet
  • 2 oz pickled mustard or preserved vegetables
  • 2 oz water chestnuts
  • ½ square inch dried tangerine peel
  • 1 slice ginger
  • 2 spring onions
  • 2 parsley sprigs
  • ½ tsp sesame oil to grease the saucer
Seasoning:
  • ¼ tsp salt
  • 2 tsp sugar
  • 1 tsp soy sauce
  • ½ tsp wine
  • A pinch of pepper
  • 1/3 cup water
  • 1 tbsp cornflour
  • 2 tbsp oil, to be added last


Directions:


1. Wash, pat dry and mince the beef fillet coarsely.
2. Dice the pickled mustard.
3. Peel and dice the water chestnuts.
4. Wash and soak the dried tangerine peel in warm water for 30 minutes, then chop coarsely with the ginger.
5. To save time, you can use a food processor to mince all the ingredients into a coarse paste.
6. Put the seasoning into a mixing bowl and stir continuously till the sugar dissolves. Add the minced beef and stir with a pair of chopsticks until evenly mixed. Pour in the oil and stir again. Leave aside to marinate for 20 minutes. Shred the spring onions and trim the parsley.
7. Grease a saucer with the sesame oil then spread the minced beef on the sauce to steam over medium heat for 6 to 8 minutes. Remove and sprinkle the shredded spring onions and parsley on top. Serve hot.

How To Make Mongolian Beef --Chinese Food

Serves : 4

Ingredients:
  • 1 lb. boneless beef, flank is good
  • 3 tbsp. oil
  • 2 cloves garlic, mashed
  • 4 scallions, cut in 2" lengths and slivered.
Marinade:
  • 2 tsp. sugar
  • 2 tsp. soy sauce
  • dash of white pepper
  • 2 T. Sherry
Sauce:
  • 2 tsp. Hoisin sauce
  • 1/2 tsp. ketchup
  • 2 tbsp. chicken broth or water 


Directions:

1. Freeze beef 1 hr. before slicing. Slice meat across the grain in very
thin slices. Mix the marinade ingredients. Add sliced beef, and marinate 1/2 hr.
2. Heat wok, add oil and garlic. Stir fry 1 min. and discard the garlic.
3. Add beef and scallions. Stir fry 3 mins.
4. Add Hoisin sauce, ketchup, and chicken broth. Stir fry 1 more min.
Serve over rice.

Chinese Recipe : Orange Beef

How to make Chinese food 
Ingredients:
  • 1/2 lb. top round steak
  • 2 tbsps. sherry
  • 2 tbsps. cornstarch
  • 2 egg whites
  • 6 tbsps. peanut oil
  • thin slices of orange rind (orange part only) or more
  • 5 dried red chili peppers, broken into pieces 8
  • 1 1/2 cups beef stock
  • 2 tbsps. soy sauce
  • 1 tsp. sugar
  • 1 1/2 tbsp. cornstarch
  • 1 tsp. red wine vinegar fresh ground black pepper to taste 

Directions:


1. Whisk together the sherry, cornstarch, and egg whites until the mixture is foamy. Add the beef and toss to coat the pieces well. Set aside. Cut meat into 2x2−inch pieces.
2. Heat 4 tbsps. peanut oil in wok. Fry beef quickly, just until crispy and browned, remove to wok rack to drain.
3. Add remaining 2 tbsps. peanut oil to wok. Add orange rind and red peppers to hot oil in wok. Stir fry until orange rind begins to darken and aroma from oil becomes pleasant.
4. Add remaining ingredients and stir until bubbly (add more beef stock if too thick). Add fried beef and toss to coat with sauce. Serve at once with steamed white rice.
